The avocado has had a real hype in recent years. In all possible variations, often as guacamole, salad, or simply on bread, it is called a superfood and eaten with pleasure. Known as aguacate in Spain, it is also available here on virtually every corner. It is rather rare to find the green butterfruit in a duet with grainy cream cheese, also known as cottage cheese in southern climes. However, this is inexplicable to me, because the two things complement each other excellently! So below is a vanlife-worthy recipe that combines avocado with cottage cheese and freshly baked rolls from the Omnia camping oven. If you don’t like it, you really can’t help yourself.
Avocado cultivation and water (shortage)
As delicious and healthy as the avocado is, its cultivation on an industrial scale is critical. It requires an extremely large amount of water. Up to one cubic meter (1,000 liters) of water is needed for two to three fruits (about 1 kg). In view of the persistent drought in the growing regions of southern Europe, it is difficult to consume avocados in large quantities. So it’s a matter of balancing and alternating the delicious tropical fruits with regional vegetables. Unfortunately, avocados imported from South America are no better in terms of their carbon footprint.

Especially the unsaturated fatty acids are very valuable for the diet. but the avocado also contains quite a bit of fiber. In combination, avocado and cottage cheese are a dynamic duo.

Ingredients for the rolls

1 packet | Dry yeast |
1 pinch | Salt |
1 pinch | Sugar |
80 g | Soygurt |
350 g | Flour |
15 g | salted sunflower seeds |
Preparation of the rolls
- Mix all ingredients (in the order of the ingredients list).
- Allow to rest for 15 minutes (depending on ambient temperature).
- Divide into six balls
- Place the buns in the Omnia silicone mold
- Let rest/leave for another 15-20 minutes (until they have noticeably increased in size).
- Bake for 15 minutes on the highest setting.
- Bake for another 20 minutes on medium to lowest setting until done.

Preparation of the topping of avocado and cottage cheese
- Peel and slice the avocado
- Coarsely chop parsley
- Slice tomato
- Cut rolls in half and drizzle with garlic oil
- Spread cottage cheese on bun halves
- Top bun halves with avocado
- Place tomato slices on top
- Salt and pepper
- Drizzle with lemon juice
- Garnish with parsley and serve.
